Atlas of Dark Seas is set to be one of our semi regular releases from our spirit barrel-aged beer program that focuses on building a stout base that receives a hefty treatment of coconut and vanilla. For the 2023 year version of AODS, we changed up the vanilla treatment by making the switch from Tahitian to Planifolia beans from Indonesia West Papua New Guinea. These new beans add a rich, deep caramel flavor versus the previous floral, tropical flavor of the Tahitian. After creating a strong, caramel base, we treated with the same amount of coconut as last year to create a liquid filled with rich flavors from your favorite girl scout cookie, espresso, and salted caramel. A decadent, rich liquid to be shared this holiday season.

A hybrid IPA which combines the crisp lager-like, firm bitterness, and piney aspects of the Cold IPA born in the heart of PDX, with the dry champagne-like, soft bitterness, and tropical fruit forward characteristics of the Brut IPA born in the heart of SFO. Our inspiration comes from having lived in the Portland and San Francisco bay areas and falling in love with each beer style. Featured ingredients include Maizzen, a malted corn from Admiral Maltings, Tropics yeast and Thiol Boost from Berkeley Yeast, and a carefully curated combination of pellet, cryo and hop extracts.

Meant for sipping, this beautiful mahogany beer delivers elegant flavors of caramelized sugars, toasty bread, and fruity fermentation esters. Light cinnamon spice combines effortlessly with the alcohol warmth and creamy carbonation.
8.5% - West Coast Double IPA
Our Gold Medal Winning Hoptomic is a hop forward West-Coast Double IPA that’s driven by profiles of Citrus, Pine and Resin. We keep the malt bill simple so it won’t interfere with all the hops. Hoptomic uses Citra (citrus/resin), Amarillo (grapefruit) and Simcoe (pine/catty) to achieve its signature flavor and aroma. Often mistaken for malt sweetness, we add so many hops, that the hop oils start to impart body and sweetness to the beer! It’s medium-bodied with medium carbonation.
6% - West Coast Blood Orange Pale Ale
A Hop Driven Beer Mad Badger "Bloodlust" starts as a traditional West Coast Pale Ale, but then we add Blood Orange to accentuate the citrus and grapefruit character. Typical to Pale Ales, we add a bit of caramel malt to balance the hop and grapefruit presence. Amarillo(grapefruit) and El Dorado (Stone Fruit) hops were chosen for their smooth bitterness in the kettle and citrus/fruity qualities. Finally, just enough Blood Orange is added to provide a refreshing aroma and flavor. It’s medium-bodied with medium carbonation.

Growing up half-Hispanic I had the pleasure of indulging in many holiday Traditions. This beer is an ode to one of my favorites as a child. Every holiday season my mother would make her delicious "Champurrado" a Mexican take on Hot Chocolate. I always looked forward to it every year! That rich chocolate taste mixed with the cinnamon and vanilla that just seemed to melt in your mouth! That and the sense of family that came with it is the backbone to this beer. My good friend John from King Cong also shared the same experience and passion for tradition and family. So we thought what better way to showcase all of that then in a beer. This Imperial Stout clocks in at 10.5% conditioned on tons of Cocoa Powder, Ancho Chiles, Guajillo Chiles, Cinnamon, and Vanilla. From our family to yours we hope you enjoy! Cheers!

Nachhooooooo! Here at SBC we love paying tribute to things tied to some of our favorite memories, specifically nostalgic memories. This beer name is an example of just that! One of my favorite movies growing up was “Nacho Libre!” For those of you who may have never seen it (go watch it right now! It has Jack Black in it) it is one of those super dry and endlessly quotable movies that has you laughing the whole way through! That, mixed with yet another tribute to a childhood nickname my father called me growing up, “Mi Tigre,” is how this beer name was born. This beer is our take on the absolutely delicious Mexican Lager. With a light sweetness from the corn, and a hint of lime from the Cashmere hops, this beer is extremely crisp, clean, and refreshing. Clocking in at 4.7% and 10 IBU’s you can literally drink this beer all day. So come on down, put on your Luchador mask, have a pint, and soar like an eagle above the ring. Cheers!

14.5% - Scotch Barrel Aged Barleywine
A unique and first of its kind project, Simmer Dim is the first beer in the United States to be aged in scotch whiskey barrels from Highland Park Distillery located on the island of Orkney in Scotland. This Barleywine was skillfully crafted with almost 90% Scottish malted barley from Simpson’s Malt, which is also one of the malts that Highland Park incorporates in their whiskey. During aging in the oak, which formerly held Spanish sherry before Highland Park, the beer develops intensely rich attributes resembling toffee and dried fig and date. The peat smoke of the scotch imbues Simmer Dim with the most intriguing campfire background that plays nicely with some boozy heat.

6.4% - Brett Saison
Collaborative brew with Casey Brewing and Blending that focuses on locally sourced ingredients. For this Brett Saison we sourced our malted barley, oats and rye from Alameda’s Admiral Maltings, Triple Pearl hops from Hoppin’ Raccoon Ranch south of Sacramento in Clarksburg, CA and yeast and brettanomyces from The Yeast Bay. The beer was brewed and fermented in stainless and then bottle conditioned for 10 months before release. The result is redolent of Spanish orange and white wine with some Brett funk. The flavor is pleasantly tart and layered with eucalyptus candy, rustic grains, tamarind and spicy hops.

SFBW Collab Release featuring the brewing stylings of Barrel Brothers & Humble Sea. Double dry-hopped with Amarillo, Citra, & El Dorado and dosing of hop terpines. All of that juicy hazy flavor with none of the alcohol!
A first of its kind NA beer! We barrel aged our dark sour base for 3 years in a mix of zin and pinot noir barrels, then got the crazy idea to run it through vacuum distillation to remove the alcohol, and re-condition on Morello cherries for another 9 months. Zippy acidity with a subtle oak profile and nuanced funk wrapped in a sweet and tart cherry finish.
Our popular "function over fashion" pilsner, de-alc'd using continuous flow vacuum distillation for maximum flavor integrity with none of the alcohol.
We call it "the dark beer for people who don't like dark beer." Flavors of mocha and vanilla with a smooth, alcohol free finish
